2 c. flour
1/4 tsp. baking powder
pinch of salt
1 c. sugar
c. canola oil
½ tsp vanilla extract
2 ripe medium-large bananas (mashed)
1. mix dry ingredients
2. add the banana, egg, and vanilla extract
3. add the oil
4. rest in the fridge for 30 min (optional)
5. preheat the oven at 395.
6. bake at 356 for 12-15 minutes
It wasn’t really like a madeleine but not a muffin.. maybe because I didn’t use almond meal? It was more like a banana madeleine like muffin. The real recipe calls for 4 eggs so it could be different but adding the bananas really gives a good banana punch!
